Fighting complacency and ignorance

I don’t know if it’s the time change this week and I’m tired… or what… but I have just not felt like doing anything in the kitchen lately. I’ve stuck with the vegetarian thing, but my husband is out of town working and this week it’s just me and the baby, so our food is about the quick and easy. I bought some (gasp) frozen food from Trader Joe’s for me. Organic stuff… but frozen, processed food nonetheless! I want to make Cauliflower Crust Pizza. I do, really. I just don’t have the time, or the energy. (I know, sorry, wah.) When I feel like this it’s when I usually fall back into my old/bad eating patterns… but because I made the commitment to stop eating meat for Lent, I’ve been holding steady on that.

  1. When I feel like that I make myself opt for almond butter and the jelly from trader joes which is a fruit spread (no added sugar or crap fillers) on ezeikiel bread. Quick and easy. Or munch on seeded tortillas (wheat or corn) and guacamole or salsa. Or veggies and hummus. All very simple and quick and filling and healthy. That’s when you should also have some healthy soup on hand. The lentil soup in the can (I know,BPAS) from trader joes is good. My kids love it. Remember you have easy healthy options!!!!!!! Don’t buy the crap!! Xoxo

    • 1. I got the lentil soup in the BOX… take that BPA!!! 2. I know about those options… it’s just that I didn’t feel like MAKING or HAVING those options… I wanted cheese, dammit! Cheesy goodness!! 3. I do have hummus and ezeikiel bread in the house; see #2.

  2. Hey, don’t forget about a quick salad too!!! It doesn’t get any easier. Just throw in all the leftover bits and pieces of tomato, celery, mushrooms, onions, carrots, olives, avocado, nuts, fruit-whatever is hanging around the house. It’s limitless!! Squeeze lemon/lime some sea salt and olive oil and u are good to go! If you eat eggs (I don’t very often) always keep some hard boiled in the fridge and add to spinach salad. Make sure they come from vegetarian fed, antibiotic free hens. Oy vey.

    • See #2 in my above answer. I do eat a LOT of salad. Sometimes, some weeks… it’s all I have for lunch. The Salad Works where I work is awesome. But then there’s the concern that it’s not organic produce. There’s the time constraint thing! Ack!!

  3. That cauliflower crust pizza looks fabulous! Glad you’re holding on to your goal/commitment. Just hold out for that pizza and you’ll feel great again, I have no doubt! ;)
